Easy Chipotle Burger Bowl Recipe

Ingredients
  • ¾ cup mayonnaise
  • 2 chipotle peppers in adobo, minced
  • Pinch of kosher salt
  • ½ teaspoon ground chipotle pepper
  • ¼ teaspoon paprika
  • ¼ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 pound lean ground beef
  • Cooking spray
  • 4 cups chopped romaine lettuce
  • ½ cup sliced pickles
  • 1 cup cherry tomatoes, halved
  • ⅔ cup crispy fried onions
  • ⅔ cup grated cheddar cheese
  • 1 small avocado, sliced
Directions
  1. Add the mayonnaise, chipotle peppers, and a pinch of salt to a small bowl.
  2. Whisk the ingredients until well blended and set aside.
  3. Add the ground chipotle, paprika, cumin, garlic powder, onion powder, kosher salt, and pepper to the ground beef. Mix well until the spices are evenly blended into the meat.
  4. Divide the meat into 6 equal portions and roll into balls.
  5. Flatten the balls to form small patties.
  6. Line a frying pan with cooking spray and place over medium-high heat.
  7. Place the patties in the pan and cook for 3 minutes until browned.
  8. Flip the patties over and cook for another 3 to 4 minutes until they reach an internal temperature of 160 F.
  9. Divide the lettuce between two bowls, top with the patties, and then divide the pickles, tomatoes, onions, cheddar, and avocado between the bowls.
  10. Top the bowls with the chipotle mayonnaise and serve.
