Cinnamon Banana Bread Muffins Recipe

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cornstarch
  • ½ teaspoon salt
  • 3 medium overripe bananas, mashed until smooth
  • 1 ¼ cup granulated sugar, divided
  • ⅔ cup sweetened condensed milk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 4 tablespoons melted butter
  • 1 tablespoon ground cinnamon
Directions
  1. Preheat the oven to 375 F.
  2. Line a muffin tin with 12 liners.
  3. Sift flour, baking powder, baking soda, cornstarch, and salt into a bowl.
  4. In a large bowl, whisk the banana, ¾ cup sugar, condensed milk, eggs, vanilla, and butter together until smooth.
  5. Combine the dry ingredients into the banana mixture and stir until just combined. Do not overmix.
  6. In a small bowl, combine the cinnamon and remaining ½ cup sugar.
  7. Fill the muffin liners halfway with batter.
  8. Spoon 1 tablespoon cinnamon sugar onto each muffin.
  9. Fill the muffin liners to the top with the remaining batter.
  10. Spoon another tablespoon of cinnamon sugar to the top of each muffin.
  11. Bake for 20 minutes, or until a toothpick comes out clean.
