BLT Cottage Cheese Wraps Recipe

Ingredients
  • 1 cup cottage cheese
  • 2 eggs
  • ½ teaspoon Italian seasoning
  • 4 slices bacon
  • 2 tablespoons mayonnaise
  • 2 lettuce leaves
  • 3 slices tomato
  • 4 slices red onion
  • 3 basil leaves
  • Sea salt and cracked black pepper, to taste
Directions
  1. Preheat the oven to 350 F.
  2. Add the cottage cheese and eggs to a food processor and blend on high for 30 seconds, until smooth.
  3. Line a baking sheet with parchment paper, then spray the paper with cooking spray.
  4. Pour the batter evenly onto the parchment paper.
  5. Sprinkle with the Italian seasoning.
  6. Bake for 35 minutes, or until lightly browned and set.
  7. While the wrap is baking, fry the bacon in a skillet over medium-high heat until crisp, approximately 5 minutes.
  8. Drain the bacon on a paper towel–lined plate.
  9. Remove the wrap from the oven and cool for 5 minutes.
  10. Flip the wrap over and peel off the parchment paper.
  11. Spread the mayonnaise onto one side of the wrap.
  12. Top the mayonnaise with the lettuce, tomatoes, onion, bacon, and basil leaves.
  13. Season, to taste, with salt and pepper.
  14. Fold the wrap, cut in half, and enjoy.
