One-Pan Tofu Tikka Masala Recipe

Ingredients
  • 14 ounces extra firm tofu
  • 2 tablespoons avocado oil
  • 1 medium-sized onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons minced ginger
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • ¼ teaspoon cayenne
  • 1 (28-ounce) can crushed tomatoes
  • ¾ cup coconut yogurt
  • ¼ cup water
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • Juice of one lime
  • 1 tablespoon minced cilantro
Directions
  1. Wrap the tofu in paper towels and gently press to remove the extra moisture.
  2. Dice the tofu into 1-inch pieces.
  3. Add the avocado oil to a large saute pan over medium-high heat.
  4. Add the tofu in a single layer and brown on both sides, approximately 1 minute per side. Set the tofu aside.
  5. Add the onions, garlic, and ginger to the same saute pan.
  6. Saute, stirring occasionally, for 2 minutes.
  7. Add the turmeric, garam masala, coriander, chili powder, and cayenne, and stir until fragrant, approximately 1 minute.
  8. Add the crushed tomatoes and coconut yogurt. Stir to combine.
  9. Add the water, salt, and pepper and stir.
  10. Bring to a light boil.
  11. Add the tofu back to the saute pan, stir, then cover the pan with a lid and simmer for 5 minutes.
  12. Remove the lid and stir in lime juice.
  13. Garnish with minced cilantro.
  14. Serve with naan and basmati rice, if desired.
